Once cooked, mix in the sachet of sesame paste seasoned with chilli, ginger and garlic. The smooth paste coats the noodles, giving them a rich and nutty flavour. Chilli and Sichuan spices give the sauce an addictive, tongue-tingling heat. To prepare your noodles, place them in a bowl and pour over 600ml of boiling water. Cover and wait for five minutes.
